To mark St Patrick’s Day over the weekend, we decided to whip up a deliciously hearty Irish stew. I absolutely adore preparing slow-cooker recipes with the kids because it allows us to get everything ready early in the morning when everyone's still in a cheerful mood. They can even help out by chopping veggies or simply keep me company while I work. By five o'clock—our usual "grumpy hour"—the meal is already prepared, leaving no room for last-minute stress.

We used a slow cooker for this dish, which is perfect for letting flavors meld together slowly throughout the day. Here’s what went into it:
**Ingredients:**
- 1 onion
- 1 teaspoon minced garlic
- 500 grams of stewing beef
- 300 grams of carrots
- 300 grams of potatoes
- 1 can of diced tomatoes
- 1 can of Irish stout (like Guinness)
- 1 sprig of fresh rosemary
**Method:**
First, brown the onions and stewing beef in some oil along with the garlic. While that’s happening, the kids can help cut the vegetables into bite-sized pieces. Once the meat is nicely browned, layer everything into the slow cooker—starting with the meat, then adding the vegetables, tomatoes, stout, and finally the rosemary for an aromatic touch. Cook it on high for about six hours or low for eight hours.

Even though my kids’ grandmother hails from Ireland, we don’t usually go all-out for St Patrick’s Day. This year, however, we had fun getting creative by making handprint shamrocks using plenty of green paint. It was such a simple yet enjoyable activity! One day, we hope to attend the grand parade held in Birmingham every St Patrick’s Day.
