Irish Stew Slow Cooker Recipe

Over the weekend, we decided to celebrate St Patrick’s Day by cooking up a delicious Irish Stew. It’s always fun to involve the kids in preparing meals like this, especially in the morning when everyone’s in a good mood. They can either help out or just sit nearby and entertain themselves while you get things done. By the time five o'clock rolls around—our usual "grumpy hour"—the meal is ready, and there’s no last-minute stress in the kitchen. We used a slow cooker for convenience, and it turned out fantastic! Here’s what went into it: **Ingredients:** - 1 onion - 1 teaspoon of minced garlic - 500 grams of stewing beef - 300 grams of carrots - 300 grams of potatoes - 1 can of tomatoes - 1 can of Irish stout (like Guinness) - A sprig of rosemary **Method:** First, brown the onions and stewing beef in a bit of oil and garlic. While that’s happening, cut the veggies into bite-sized chunks. I let the kids mix everything together before transferring it all into the slow cooker. We cooked it on high for six hours or low for eight hours. Just before serving, sprinkle some fresh rosemary on top for an extra burst of flavor. For a traditional touch, we paired the stew with Soda Farls. These are essentially a type of soda bread that’s flattened and cooked on a griddle.
