I've been eager to try my hand at making cake pops for quite some time now. With the girls' birthdays approaching, I decided it was the perfect opportunity to give this recipe a go. I must admit, I was pleasantly surprised by just how straightforward it was to create the cake balls and how scrumptious they turned out. Cake pops are a delightful combination of a crisp exterior and a soft, melt-in-your-mouth filling—truly irresistible. However, decorating them proved to be the trickiest part, as speed is essential before the chocolate sets.
Thankfully, all the necessary ingredients and supplies can be easily found on eBay or at craft stores like Hobbycraft and Lakeland. Here's our take on the Rainbow Fish Cake Pops recipe.
**Ingredients for Rainbow Fish Cake Pops:**
- 280g (10oz) icing sugar
- 140g (5oz) butter
- 1 teaspoon vanilla essence
- 1 teaspoon blue food coloring
- 1 cake
**Instructions:**
**For the Cake:**
Start by creaming together the icing sugar and butter until you achieve a smooth consistency. Add in the vanilla essence and blue food coloring, then crumble the cake into fine pieces. Mix everything thoroughly until combined, and shape the mixture into a ball. Place this in the refrigerator for about an hour.
Once chilled, remove the cake ball and roll it into smaller balls. Shape these into fish forms and return them to the fridge for another half hour. Insert lolly sticks into each fish, being cautious not to push them too far. Apply a small amount of melted chocolate or candy melt at the base of the stick to secure it to the cake pop and prevent it from falling off during dipping. Return the cake pops to the fridge for another half hour.
**For the Decoration:**
Melt the chocolate or candy melts using a double boiler method over a bowl of hot water. Quickly dip each cake pop into the melted chocolate, allowing only a few seconds for the decoration process before the chocolate hardens. Use sprinkles to create a fish-like appearance, adding details such as candy eyes, silver balls, colorful sprinkles, butterfly shapes for the mouths, candy diamonds for the tails, and chocolate Jazzies for the fins.
Although several of our rainbow fish creations didn't survive the process—mostly due to being slightly oversized and falling off the sticks—it was a fun learning experience. My four-year-old daughter enjoyed helping with rolling the cake balls and decorating but found the dipping part challenging since timing is crucial. It’s also important to keep returning the cake pops to the fridge to ensure the mixture remains firm enough to stay on the stick.
