The International Association for Food Protection (IAFP) Annual Conference, held from July 16 to 19 in Toronto, saw a record turnout, partly due to the end of pandemic restrictions. Professionals from regulatory bodies, academia, industry, and advocacy groups gathered to discuss key topics such as food safety innovations, culture, and sustainability. Vikan’s Global Hygiene Specialist, Deb Smith, was honored as Sanitarian of the Year.
Over 3,500 food safety professionals from 58 countries attended IAFP 2023, engaging in professional development, exhibitions, presentations, and networking events. One of the standout sessions was on Food Safety Culture, where Lone Jespersen from Cultivate SA emphasized the importance of moving beyond compliance to building an internalized food safety culture among employees.

Other notable sessions included discussions on dry surface biofilm control, sustainable products, allergen management, and updates on Canadian food safety regulations. Sustainability was also a major theme, with speakers highlighting the need for recycled materials in food contact plastics, despite current FDA and EU regulations.
Pathogen monitoring and investigation updates were also a focus, especially following the 2022 powdered infant formula outbreak. The CDC plans to include Cronobacter sakazakii on its notifiable diseases list by 2024.
Remco presented a poster on FDA inspection trends from 2006 to 2022, helping identify common weak points in food safety systems. Deb Smith was also recognized for her contributions, receiving the IAFP Sanitarian of the Year award.
Randy Huffman of Maple Leaf Foods reflected on the 2008 Listeriosis outbreak, emphasizing the need for a proactive food safety culture. The 2024 IAFP Conference will take place in Long Beach, California, from July 14 to 17.
