1. Biological functions of proteins
Proteins are the fundamental building blocks of life. Without proteins, there would be no life. (G) Other functions: Some proteins have specialized roles, such as the nucleoproteins found in viruses and bacteriophages, which can cause disease.
2. Molecular composition of proteins
(A) Elemental composition: Proteins are primarily composed of carbon, hydrogen, oxygen, and nitrogen. Some may also contain sulfur, phosphorus, or metal ions. The nitrogen content in all proteins is relatively consistent, averaging around 16%. This property allows scientists to estimate protein content based on nitrogen levels in a sample.
(B) Amino acids: Amino acids are the basic units that make up proteins. While over 300 amino acids exist in nature, only 20 are used in human proteins. These 20 are all L-α-amino acids, except for glycine, which lacks a chiral center. Most amino acids have a chiral carbon, making them optically active. Based on the properties of their side chains (R groups), amino acids can be classified into four categories: non-polar hydrophobic, polar uncharged, acidic, and basic. Each group contributes differently to the overall structure and function of proteins.
